A popular Filipino stir-fried noodle dish made with egg noodles, meat, seafood, and assorted vegetables, seasoned with soy sauce and oyster sauce. Commonly served at birthdays and gatherings for good luck and long life.

Ingredients

  • Pancit canton noodles (egg noodles)
  • Chicken, pork, or shrimp
  • Garlic, minced
  • Onion, chopped
  • Carrots, sliced
  • Cabbage, shredded
  • Bell peppers
  • Soy sauce
  • Oyster sauce
  • Salt
  • Pepper
  • Cooking oil
  • Chicken broth or water
  • Calamansi (optional, for serving)

Procedure

  1. Heat oil in a wok or pan and sauté garlic and onion until fragrant.
  2. Add meat or shrimp and cook until lightly browned.
  3. Pour in soy sauce, oyster sauce, and broth or water, then bring to a simmer.
  4. Add noodles and toss until softened and coated with sauce.
  5. Mix in carrots, cabbage, and bell peppers, cooking until vegetables are tender but crisp.
  6. Season with salt and pepper to taste.
  7. Serve hot with calamansi on the side.
