Ingredients

  • Spaghetti or other pasta
  • Eggs
  • Parmesan or Pecorino Romano cheese, grated
  • Pancetta or bacon, diced
  • Garlic, minced (optional)
  • Salt
  • Black pepper
  • Olive oil

Procedure

  1. Cook pasta in boiling salted water until al dente, then set aside some pasta water.
  2. Heat olive oil in a pan and cook pancetta or bacon until crisp.
  3. Add garlic if desired and sauté briefly.
  4. Whisk eggs with grated cheese and black pepper in a bowl.
  5. Combine hot pasta with pancetta or bacon, then remove from heat.
  6. Quickly stir in egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Season with extra black pepper and serve immediately.
