Ingredients
- Spaghetti or other pasta
- Eggs
- Parmesan or Pecorino Romano cheese, grated
- Pancetta or bacon, diced
- Garlic, minced (optional)
- Salt
- Black pepper
- Olive oil
Procedure
- Cook pasta in boiling salted water until al dente, then set aside some pasta water.
- Heat olive oil in a pan and cook pancetta or bacon until crisp.
- Add garlic if desired and sauté briefly.
- Whisk eggs with grated cheese and black pepper in a bowl.
- Combine hot pasta with pancetta or bacon, then remove from heat.
- Quickly stir in egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with extra black pepper and serve immediately.
