Ingredients
- Rice noodles (bihon)
- Ground pork
- Shrimp
- Garlic, minced
- Onion, chopped
- Annatto seeds or annatto powder
- Fish sauce
- Salt
- Pepper
- Cooking oil
- Water or broth
- Hard-boiled eggs
- Chicharrón (crushed pork cracklings)
- Spring onions
- Fried garlic
- Calamansi (optional, for serving)
Procedure
- Soak rice noodles in water until softened, then drain.
- Heat oil in a pan and sauté garlic and onion until fragrant.
- Add ground pork and cook until lightly browned.
- Stir in annatto seeds or powder for color, then add fish sauce, salt, pepper, and broth.
- Simmer until sauce thickens and flavors blend.
- Cook shrimp in the sauce until pink and tender.
- Arrange noodles on a platter, pour sauce over, and top with shrimp and pork.
- Garnish with hard-boiled eggs, chicharrón, spring onions, and fried garlic.
- Serve hot with calamansi on the side.
