Unlike the traditional Italian carbonara (which uses eggs, Pecorino Romano, and guanciale), the Filipino version is cream‑based, milder, and often sweeter — making it a favorite for family meals and celebrations.
Ingredients:
- Spaghetti or fettuccine
- Bacon or ham, chopped
- Butter
- Onion, minced
- Garlic, minced
- All‑purpose cream (or heavy cream)
- Evaporated milk (optional, for extra creaminess)
- Grated cheese (cheddar or quick‑melt; Parmesan for a sharper taste)
- Chicken bouillon cube (optional, for depth)
- Salt and pepper to taste
- Chopped parsley (for garnish)
Instructions:
Step 1: Cook Pasta
- Boil water with salt.
- Cook pasta according to package directions until al dente.
- Drain and set aside.
Step 2: Prepare Sauce
- In a pan, melt butter.
- Sauté onion and garlic until fragrant.
- Add bacon or ham and cook until lightly crisp.
- Pour in cream and evaporated milk.
- Add bouillon cube (if using) and stir until dissolved.
- Mix in grated cheese until sauce is smooth.
- Season with salt and pepper.
Step 3: Combine
- Toss cooked pasta into the sauce.
- Mix until pasta is fully coated and creamy.
Step 4: Serve
- Transfer to a serving dish.
- Garnish with parsley and extra cheese.
