A traditional Filipino stew made with tender beef and vegetables simmered in a rich peanut sauce, usually served with bagoong (shrimp paste) on the side.
Ingredients
- Beef shank or oxtail
- Peanut butter or ground peanuts
- Annatto seeds or annatto powder
- Garlic, minced
- Onion, chopped
- Banana heart or eggplant
- String beans
- Pechay or bok choy
- Salt
- Pepper
- Cooking oil
- Water or beef broth
- Bagoong (shrimp paste, for serving)
Procedure
- Boil beef shank or oxtail in water or broth until tender, then set aside.
- Heat oil in a pan and sauté garlic and onion until fragrant.
- Add annatto seeds or powder for color, then stir in peanut butter or ground peanuts to form the sauce.
- Combine beef with the sauce and simmer until flavors blend.
- Add vegetables and cook until just tender.
- Season with salt and pepper to taste.
- Serve hot with bagoong on the side and steamed rice.
