Pancit Canton (Solo)

Pancit Canton is a Filipino noodle dish made with stir‑fried egg noodles, meat (chicken, pork, or shrimp), and assorted vegetables in a savory soy‑oyster sauce. It’s festive, filling, and often served at birthdays and gatherings because noodles symbolize long life in Filipino tradition. Compared to pancit bihon (rice noodles), pancit canton uses thicker, chewy egg noodles that soak up more flavor.

Ingredients:

• Pancit canton (Filipino egg noodles)
• Chicken breast or pork, sliced thinly
• Shrimp (optional)
• Cooking oil
• Garlic, minced
• Onion, sliced
• Carrot, julienned
• Cabbage, shredded
• Snow peas (sitsaro)
• Bell pepper, sliced
• Young corn, sliced
• Soy sauce
• Oyster sauce
• Fish sauce (optional, for depth)
• Chicken broth or water
• Salt and pepper to taste
• Calamansi or lemon wedges (for serving)

Instructions:

Step 1: Prepare Protein

1. Heat oil in a wok or pan.
2. Sauté garlic and onion until fragrant.
3. Add chicken/pork and cook until lightly browned.
4. Add shrimp (if using) and cook until pink.

Step 2: Add Vegetables

1. Toss in carrots, young corn, and bell pepper.
2. Stir‑fry for 2–3 minutes.
3. Add cabbage and snow peas last to keep them crisp.

Step 3: Cook Noodles

1. Pour in chicken broth, soy sauce, and oyster sauce.
2. Add pancit canton noodles.
3. Stir continuously until noodles absorb liquid and turn tender (about 5–7 minutes).

Step 4: Season and Serve

1. Adjust seasoning with salt, pepper, and fish sauce if desired.
2. Transfer to a serving platter.
3. Garnish with calamansi or lemon wedges.
4. Serve hot with rice or as a standalone dish.
