Pancit Bihon is a savory noodle dish made from rice stick noodles (bihon), stir‑fried with meat, vegetables, and a soy‑based sauce. It’s colorful, filling, and celebratory — often cooked in large batches for parties. The dish traces its roots to Chinese cuisine but has been fully embraced as a Filipino staple.

Ingredients:

  • Bihon rice noodles (soaked in water for 10 minutes)
  • Chicken breast or pork, sliced thinly
  • Cooking oil
  • Garlic, minced
  • Onion, sliced
  • Carrot, julienned
  • Cabbage, shredded
  • Green beans or snow peas
  • Bell pepper, sliced
  • Soy sauce
  • Oyster sauce (optional, for depth)
  • Chicken broth
  • Salt and pepper to taste
  • Calamansi or lemon wedges (for serving)

Instructions:

Step 1: Prepare Protein

  1. Heat oil in a wok or pan.
  2. Sauté garlic and onion until fragrant.
  3. Add chicken or pork and cook until lightly browned.

Step 2: Add Vegetables

  1. Toss in carrots, beans, and bell pepper.
  2. Stir‑fry for 2–3 minutes.
  3. Add cabbage last to keep it crisp.

Step 3: Cook Noodles

  1. Pour in chicken broth, soy sauce, and oyster sauce.
  2. Add soaked bihon noodles.
  3. Stir continuously until noodles absorb liquid and turn tender (about 5 minutes).

Step 4: Season and Serve

  1. Adjust seasoning with salt and pepper.
  2. Transfer to a serving platter.
  3. Garnish with calamansi or lemon wedges.
