The beef is marinated in soy sauce and oyster sauce, then quickly stir‑fried with garlic and onions. The ampalaya adds a distinct bitter flavor, which is mellowed by the savory beef and seasonings. It’s a nutritious, protein‑rich dish often served with steamed rice.

Ingredients:

  • Beef sirloin or tenderloin, thinly sliced
  • Ampalaya (bitter melon), sliced thinly and seeds removed
  • Garlic, minced
  • Small onion, sliced
  • Soy sauce
  • Oyster sauce
  • Cornstarch (for beef coating)
  • Cooking oil
  • Water or beef broth
  • Salt and pepper to taste

Instructions:

Step 1: Prepare Ampalaya

  1. Slice ampalaya thinly and remove seeds.
  2. Rub slices with salt, let sit for 10 minutes, then rinse with water to reduce bitterness.

Step 2: Marinate Beef

  1. Mix beef slices with soy sauce, oyster sauce, and cornstarch.
  2. Let marinate for 15–20 minutes.

Step 3: Stir‑Fry

  1. Heat oil in a pan or wok.
  2. Sauté garlic and onion until fragrant.
  3. Add marinated beef and stir‑fry until browned.
  4. Add ampalaya slices and water/broth.
  5. Cook for 3–5 minutes until ampalaya is tender but still slightly crisp.

Step 4: Season and Serve

  1. Adjust seasoning with salt and pepper.
  2. Transfer to a serving dish.
  3. Serve hot with steamed rice.
